1 1/4 cups chocolate cookie crumbs
1/4 cup sugar
1/4 cup butter, melted
1 8oz. package cream cheese, softened
1 cup peanut butter
1 cup sugar
1 tablespoon butter, softened
1 teaspoon vanilla
1 cup heavy cream*
Combine cookie crumbs, 1/4 cup sugar, and 1/4 butter; press into a 9" pie plate.
Bake at 375 degrees for 10 minutes. Cool.
In mixing bowl, beat cream cheese, peanut butter, sugar, butter and vanilla until smooth. In a separate bowl, whip the cream and fold into the peanut butter mixture. Spoon filling into crust. Garnish with chocolate or cookie crumbs, and drizzle with carmel sauce, if desired.
Refrigerate or freeze.
*Note: You can use Cool Whip whipped topping, but I prefer whipping the cream myself.
Be sure to have a glass of milk handy!
